Add details about how to get longer-term prometheus data (#21)

Instead of picking some value that requires a certain amount of space, I think that the better way to do things is to aim for a lower retention time by default, to reduce the overall storage requirements for people trying things out, and just document how to bump it up for people when they are configuring things.
