some formatting improvements in README and addtions to explain how to disable optional services

since I've been running into an issue where I had to disable the optional services in config/services.common.yml to run the deployment

As a future improvement it would be nice if we don't need to touch config/service.common.yml at all and just enable services by using the corresponding tags in host.yml.
